Festive Salad by Stacy Nehring

1/2 cup of sugar
1/3 cup red wine or cider vinegar
2 TB lemon juice
2 TB finely chopped onion
1/2 tsp salt
2/3 cup vegetable oil
2-3 teaspoons poppy seeds

In blender or food processor, combine the sugar, vinegar, lemon juice, oinion and salt. Cover and process until blended. Add oil and poppy seeds and blend.

10 cups romaine (I usually buy a 3 pack of romaine hearts and use it all)
1 cup shredded Swiss cheese
1 medium apple, cored and cubed (pink lady or gala)
1/4 cup dried cranberries
1/2-1 cup chopped cashews

In a salad bowl, combine the romaine, Swiss cheese, apple, pear and cranberries. Drizzle with desired amount of dressing. Add cashews; toss to coat. Serve immediatley. Yeild: 8-10 servings.
